做法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量(liàng )清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬(áo )干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
